My Favorite Way to Cook Zucchini and Potatoes...

First of all I love this tool! 
You get the perfect slices using it...


Hold the zucchini and just run it across the blade...

The zucchini falls into the container attached...

Nice thin slices.  Works great on cucumbers as well.

Place zucchini in aluminum foil in grill pan. 
I just discovered lining my grill pan with aluminum foil  
makes clean up so much easier!

If you don't have a grill pan, just wrap the zucchini up in aluminum foil,
but don't close completely.  
You'll want to stir them while they're grilling. 
Sprinkle with salt, pepper and a maybe a tablespoon of butter.
You don't need much butter at all.  

Cook until zucchini is soft and tender...

Now on to the potatoes.
First boil the potatoes until they are fork tender.
Then cut them in half, or you can slice them. 

Spread some olive oil on a sheet of aluminum foil. 
Yes, I poured a little too much here.
Place potatoes on top, sprinkle with salt and pepper.

Wrap them up, but don't completely close them.
You'll want to turn them while they're on the grill.

Potatoes all done.

So crispy!

I also grilled a hamburger to go along with my favorite vegetables. 
Looks and tastes DELICIOUS!

I'll be making these two side dishes until it's too cold to stand outside and grill.

  1. This my friend sounds absolutely delicious! I like to dice up zucchini, onion, mild peppers add seasoning salt, garlic powder and pepper and sautee it in a touch of olive oil until they are melt in your mouth mushy tender. Of course it wouldn't be finished without topping it off with some fresh parm cheese. Out of this world good and so simple. For an added twist, I do the same recipe only I add a small jar of spaghetti sauce and simmer. Both ways make wonderful side dishes.

  3. Sure looks yummy, Lois! We like ours thinly sliced, and sauteed with onions and a little bacon grease! YEAH!!!!

  4. I wish I had one of those slicing gadgets! I like zucchini so many ways it's hard to choose "one"...but I really like it breaded (dipped in egg/milk mixture, then crumbs) and fried, or you can do the same by oven baking. (line a cookie sheet with foil). I add Italian seasonings like sweet basil and oregano and a little salt to the breading. Serve as a side with almost anything!

  5. I remember these cutters from years ago, I am going to look for one at a yard sale. I am also going to try the zucchini your way. I have so much of it that I have no idea what I am going to do with it all. Giving away as much as I can, plus I juice it and drink for breakfast.
